
Ingredients
1 bag Baker Farms Curly Mustard Greens 8oz of diced cooked bacon (reserve the bacon grease)
1 cup of diced or julienne Vidalia® Onions(if using spring onions, slice green section to fry for topping)
1 cup of diced red bell pepper
2 minced garlic gloves
1 pint of halved cherry tomatoes or 1 diced tomato
3oz of red wine vinegar
4oz olive oil

Preparation
Directions:
Saute onion, bell peppers, garlic, and ½ of the tomatoes until soft in ½ of the reserved bacon grease. Remove from heat and put into a blender. Once in the blender, add vinegar and blend. With blender still on, slowly incorporate the oil until emulsified. Heat remaining bacon and wilt the mustard greens for about 30 seconds. While still in the pan add the mixture from the blender into the greens. Add salt to taste. Top with fried onions and serve immediately.
